The story
Rooted in the rugged Djurdjura mountains of Kabylie, Aghrum Oufourki (also known as Aghrum n'el Ahwal) is crafted by Amazigh women to welcome the onset of spring. Historically foraged across terraced slopes during the seasonal weed-pulling and rejuvenation cycle, the bread serves as both a restorative midday field meal and a sacred celebration of biodiversity. Unlike standard leavened doughs, this crust relies entirely on fine semolina and cold-pressed mountain olive oil rubbed together to create a short, biscuit-like crumb that seals in the steamed wild filling.
