The story

Akpan is a beloved street-corner refreshment and morning nourishment throughout Southern Togo, especially among the Ewe population who prize its brisk, cooling properties. Originally prepared by extracting fermented starch milk (ogui) from steeped whole white dent maize, it transforms simple field corn into an elegant, yogurt-like emulsion.
