The story
Emerging from Northern and urban Tunisia, Assidat Zgougou is the quintessential centerpiece prepared to commemorate Mawlid al-Nabi (the Prophet's birthday). Historically adopted during the severe 1864 famine when grain was scarce, resourceful cooks processed the seeds of the Pinus halepensis tree into a luxurious culinary hallmark. Technically, the raw seeds must be ground into a paste and meticulously triple-strained through fine cheesecloth or nylon to yield a smooth, resinous seed milk without gritty sediment.
