Atanga Grillé (Charcoal-Roasted African Butterfruit)
Tender, buttery charcoal-roasted African atanga fruit paired with coarse salt and steaming sticks of fermented cassava.
The story
Across central and southern Gabon, roadside charcoal braziers fill the humid air with the nutty perfume of roasting atanga (Dacryodes edulis) during the heavy rains. Consumed in the late afternoon as an energising street bite, it is universally enjoyed alongside freshly unrolled chikwangue (steamed fermented manioc batons). The fruit requires radiant, indirect ember heat to gently liquefy its dense natural pulp oils without scorching its fragile indigo-purple skin.
