The story

Embraced across every social tier throughout Morocco, Atay bi Naa-Naa is the fundamental bedrock of Maghrebi hospitality and social ceremony. While green tea entered the Moroccan Sultanate via British merchant vessels in the 18th and 19th centuries, it was rapidly transformed through indigenous herbal traditions into an elaborate, multi-stage table ritual. An authentic preparation requires washing the dried tea pearls with boiling water to purge surface dust while preserving the 'spirit' (rooh) of the tea leaf for balanced astringency.
