Bikedi (Steamed Fermented Cassava Leaves with Groundnuts)
Earthy, lightly fermented cassava leaves slow-steamed with rich roasted peanut paste and tender smoked river fish.
The story
Bikedi is a revered specialty of the Kwilu and Kwango provinces, celebrated as a restorative feast during collective agricultural field clearings known as 'salongo'. Unlike standard pondu, Bikedi uses cassava leaves that undergo a brief controlled fermentation prior to pounding, unlocking a deep savory tang. The dish represents a masterclass in Central African emulsion, using natural fats from roasted groundnuts to neutralize bitter cassava compounds. In traditional Bandundu kitchens, the stew is sealed under layered plantain leaves to trap aromatic steam over glowing ember hearths.
