The story

Known as Bofrot in Ghana and closely related to Togolese and Nigerian puff-puff, this beloved golden pastry is sold at dawn by curbside street vendors and served alongside hot Hausa koko or spiced tea. Unlike Western rolled doughnuts, authentic Bofrot relies on a thick, elastic wet batter that is dropped by hand directly into hot oil using a quick squeeze through the thumb and forefinger. The traditional hallmark of Ghanaian Bofrot is an assertive presence of freshly grated whole nutmeg, which imparts a fragrant, warming aroma unmatched by pre-ground alternatives.
