The story

Across Bangui and the fertile Ubangi River basin, Bouillie de Maïs is prepared at dawn by Gbaya and Banda households as well as bustling market vendors to invigorate workers and students. Fermenting the raw corn mash over one to two days introduces active lactic acid bacteria, yielding a crisp, refreshing acidity that cuts through morning humidity and stimulates digestion. Technically, this prolonged lactic fermentation naturally breaks down complex corn starches into maltose and dextrins, which enables the porridge to gelatinize into a glossy, lump-free texture at significantly lower cooking temperatures.
