The story
Ubiquitous in Kigali's vibrant evening bar culture, brochettes are East Africa's definitive social accompaniment to cold local beer. While introduced through colonial Belgian influences, Rwandan grill masters developed their own distinct identity using mature goat meat (ihene) and fiery pili-pili marinades. Traditionally, the skewers alternate lean muscle meat with small cubes of rich goat fat, which render over incandescent charcoal to continuously baste the meat and prevent dryness.
