The story

Practiced daily across all nine ethnic groups in Eritrea, the Buna ceremony is a cornerstone of domestic hospitality and communal bonding performed three times a day. Served in three deliberate rounds—Awol, Bole, and Bereka—the ritual transforms raw green coffee cherries into a rich, dark beverage poured from a height without disturbing the resting grounds in the base of the spherical clay jebena. Historically, women master the pan-roast over low charcoal embers, utilizing frankincense smoke (itan) to cleanse the sensory space while assessing roasting crack stages by ear and sheen.
