The story

Calulu de peixe is the quintessential centerpiece of coastal Luanda and Benguela family gatherings, traditionally simmered for Sunday lunch. Born from coastal trade routes, the dish layers preserved seafaring provisions with local indigenous greens like amaranth and sweet potato leaves. Technologically, the stew is never stirred during cooking; instead, it is cooked in distinct strata and shaken gently to allow the mucilage from fresh okra to emulsify with unrefined palm oil.
