The story

Originating among the Wolof people, Ceebu Yapp is a cornerstone of celebratory family lunches and milestone festivities across Dakar and Saint-Louis. Unlike its tomato-heavy cousin Ceebu Jën, this dish relies entirely on the Maillard browning of meat and onions, known as saff, to impart its deep amber hue. A traditional nuance unfamiliar to many Western cooks is the incorporation of 'yeet' (fermented dried cymbium sea snail), which gives the rich braise its distinct, irreplaceable umami backbone.
