The story

Chichinga is the Ghanaian sibling of northern Nigerian suya, perfected by Hausa street-grill masters (mallams) across night markets from Osu to Tamale. The secret lies in tankora—a dry rub driven by defatted roasted peanut powder (kuli-kuli) and aromatic calabash nutmeg that caramelizes over glowing hardwood coals.
