The story

Chicwanga (also written Chikwangue or Kwanga) is the ancient culinary hallmark of the Bakongo civilization inhabiting northern Angola and the lower Congo basin. Carried by travellers, hunters, and river fishermen due to its remarkable shelf life without refrigeration, it remains a pillar of rural and urban food culture. The traditional method requires submerging raw bitter cassava in slow-moving stream waters for three days to ferment, which neutralizes natural toxins and develops its signature sour, sourdough-like aroma.
