The story
Originating from the interior mountains of Santiago island, cuscus de milho is the foundational morning sustenance for Cape Verdean families, eaten alongside steaming cups of black coffee or rich goat's milk. Rooted in West African grain steaming techniques brought during the transatlantic trade, the dish adapted indigenous African couscous methods to New World maize. Traditional cooks steam the cake in a perforated clay vessel called a 'bindu' fitted tightly over a boiling pot of water, sealing the rim with a flour paste ribbon to ensure no steam escapes during the gentle transformation.
