The story

Hailing from the western shores of Kigoma along Lake Tanganyika, this dish is the culinary cornerstone of the Ha people, eaten as an everyday high-protein meal alongside stiff cassava ugali. The endemic freshwater sardines are sun-dried on clean lakeshore sands and prized over marine dagaa for their sweet, clean mineral flavor and absence of bitterness. Parboiling and washing the dried fish before cooking rehydrates the flesh while stripping away any residual surface grit.
