The story
Harvested along the forest borders of old roças (agricultural estates) on the island of Príncipe, wild pink guavas are prized for their intense perfume and high natural pectin. Plantation families simmer large copper cauldrons of this preserve during the fruiting season to preserve the harvest for festive feasts and afternoon meriendas. The crucial culinary step involves sieving the cooked pulp through fine wire to eliminate hard grit while retaining suspended pectin that sets the preserve without commercial gelatin.
