The story

Eghajira is the quintessence of hospitality among the Tuareg pastoralists of the Aïr Mountains and Agadez region in northern Niger. Offered immediately to weary travelers arriving from Saharan journeys, this nutrient-dense liquid meal instantly rehydrates and replenishes lost electrolytes. Technically, the roasted pearl millet and dehydrated dates are finely pounded with wild herbs before being vigorously emulsified with fresh spring water and aged goat curd or laban.
