The story

Emahewu is the quintessential non-alcoholic refreshing beverage consumed across all four administrative districts of Eswatini, commonly carried into the fields by farm workers during the midday heat. Unlike alcoholic sorghum beers, this preparation relies on short lactic acid fermentation rather than yeast-driven ethanol production, making it an energizing staple suitable for all ages. Traditionally, a small measure of wheat flour or malted grain is introduced into cooled thin maize porridge (liphaphi) to supply the amylase enzymes that yield fermentable sugars for the naturally occurring lactobacilli.
