The story
Originating among the riverine communities along the Blue and White Niles, Fesikh Sudani is the iconic centerpiece lunch for the first day of Eid al-Fitr across central Sudan. After a month of fasting, the sharp, savory intensity of fermented fish cuts through holiday fatigue and revives the palate in large family banquets. Unlike Egyptian fesikh which is eaten raw and cured, Sudanese fesikh is filleted, rinsed, and cooked into an emulsion with dakwa (roasted peanut paste) to balance its pungent umami.
