The story

Across the coastal fishing villages of São Tomé, roasting whole breadfruit over spent charcoal coals is an essential culinary ritual performed alongside grilling the daily catch. First introduced to the archipelago during the 18th century as a robust plantation crop, the starchy fruit became a beloved pillar of Forro cuisine. Roasting the fruit directly in its skin creates an internal steam oven where high heat caramelizes natural sugars without drying out the flesh.
