The story
In the Tigrinya highlands of Eritrea, ga'at is traditionally prepared at dawn to sustain laborers or served during hidgoso to celebrate the birth of a newborn child. New mothers consume it for restorative strength, believing the roasted whole grains swiftly replenish lost vitality. The traditional wooden stirring stick, called a mokosheshe, requires continuous rolling wrist tension against the base of the pot to thoroughly gelatinize the starches without forming rubbery lumps.
