The story

Hailing from the Oyo and wider Yoruba heartlands of southwestern Nigeria, gbegiri is the quintessential component of the celebrated Abula trinity alongside ewedu and amala. Traditionally served at celebratory gatherings and bustling roadside buka stalls, it provides a savoury, earthy counterbalance to bitter jute leaves. Authentic gbegiri demands completely skins-off cowpeas cooked until collapsed, historically sieved through a hand-held woven basket (ase) rather than blended, ensuring a glossy, suspension-stable texture without chalky sediment.
