The story
Centuries of trans-Saharan trade and Arab-Berber migration into the ancient city of Kano gave rise to Gurasa, an iconic flatbread baked inside traditional clay tandoor-style ovens called tanda. It forms an indispensable part of Iftar feasts during Ramadan and royal banquets hosted across northern emirates. Unlike conventional flatbreads, authentic Gurasa undergoes steam-baking in high-heat earthen vessels, yielding an exceptionally airy, spongy crumb designed specifically to soak up spiced groundnut oils and savory sauces.
