The story
In the vibrant Swahili quarters of Bujumbura, such as Buyenzi and Bwiza, imikate are hauled fresh from bubbling cast-iron woks at dawn. They are traditionally eaten alongside spiced black tea or milky porridge as a restorative, energizing breakfast before daily labor begins. While related to East African mahamri, authentic Burundian imikate use a wetter, dropped batter rather than a rolled dough, resulting in irregular spherical shapes with an ultra-light, lace-like interior webbing.
