The story
Popular throughout Central and Eastern Uganda among the Baganda and Basoga communities, Kabalagala are ubiquitous afternoon street snacks enjoyed alongside spiced milk tea. Unlike Western pancakes, these rustic fritters require no eggs, milk, or leavening agents, relying entirely on the natural pectin and sweetness of tiny local sweet bananas (sukali ndizi). The high amylopectin content of cassava flour creates a unique dense, chewy bite resembling mochi rather than fluffy sponge.
