The story

Kajaik is a signature sun-dried fish stew traditionally prepared by Dinka and Shilluk fishermen during the dry fishing season along the Nile Basin. Cooked on riverbanks and in homesteads to celebrate successful seasonal catches, it supplies concentrated protein throughout the year. The distinctive umami profile arises from dry-curing oily freshwater mudfish in the intense tropical sun, followed by softening in boiling aromatics to balance the deep fish flavor.
