Kanya (Pounded Toasted Peanut and Rice Flour Sweet)
A crumbly, melt-in-the-mouth Mende sweet confection made from dry-toasted rice and roasted peanuts pounded with sugar.
The story
Kanya is a revered confectionery originating among the Mende and Limba peoples of Sierra Leone, traditionally prepared as an energy-dense treat for long journeys and gifted during communal ceremonies. Rather than using wet syrups, this sweet relies on friction and mechanical force in a heavy wooden mortar to draw out natural oils from roasted groundnuts. A subtle culinary secret lies in par-toasting the raw rice until deeply nutty and fragrant, which imparts a distinctive toasted grain flavour and crisp, sandy textural contrast.
