The story

Along the bustling shores of Salima, Nkhata Bay, and Mangochi, Kanyenya stalls light up at dusk as fishermen land their daily catch of Chambo and Mpasa. Street vendors butterfly the fresh lake fish, deeply score the skin, and coat the flesh in a vibrant, spiced allium paste before searing it over open wire grates. The defining technique involves pressing the fish firmly between hinged wire mesh racks, allowing high-heat caramelization while preventing the tender, flaky freshwater meat from falling into the coals.
