The story
Kikwanga is the quintessential daily staple of the Bakongo and Teke peoples, serving as an edible vessel for rich moambé sauces and grilled river catches. Prepared through a painstaking multi-day submerged water fermentation process, the bitter cassava roots lose their toxicity and develop a distinctive sourdough-like tang. Technically, the dough undergoes pre-gelatinization during a preliminary pot-beating stage called 'pre-cooking', which activates starches to ensure the final steamed baton achieves its signature elastic, sliceable texture.
