The story

Originating from the Gurage people of southwestern Ethiopia, Kitfo is a dish of high culinary reverence served at special social gatherings and Meskel festivities. It is prepared using the leanest, freshest cuts of beef, traditionally minced by hand using sharp curved knives to maintain velvety texture. It can be enjoyed 'tire' (completely raw), 'leb-leb' (warmly warmed through for seconds), or 'yebesele' (fully cooked).
