The story

In the arid northern Yatenga province, Mossi and Fulani farming households prepare Kounan in massive clay canaris before the sun rises over the Sahel. Consumed as a warm, restorative porridge before heavy agricultural fieldwork, it provides sustained low-glycemic stamina throughout the day. Technical precision lies in the overnight lactic acid fermentation of whole red sorghum, which unlocks iron and zinc bioavailability while imparting an unmistakable, bright acidity tempered with pungent grains of Selim.
