The story

Kpem is the foundational gastronomic signature of the Beti people in the Center and South regions of Cameroon, eaten as a wholesome weekday meal. Unlike other African cassava leaf stews, authentic Kpem contains absolutely zero added cooking oil, relying solely on prolonged boiling to break down tough plant fibers and develop its deep earthy sweetness. Traditionally, young tender cassava shoots are harvested early in the morning and meticulously pounded in a tall wooden mortar with a heavy pestle until reduced to a silky green paste.
