The story
Consumed at dawn across Chad from N'Djamena to the southern Guéra plains, La Bouillie provides the primary caloric fuel for workers and schoolchildren before daily routines begin. Street vendors, commonly called 'femmes de la bouillie', simmer massive cauldrons over charcoal braziers at major crossroads throughout the early morning. A defining Chadian technique is the finishing addition of fresh lemon juice, which cuts the rich groundnut lipids and slightly curdles the starches to yield its iconic velvety consistency.
