The story
In urban Bambara and Fulani households, Lafidi is prepared before dawn to fortify workers and farmers with sustained energy. Traditionally, whole okra and fresh chili peppers are steamed directly on top of the cooking rice before being pounded together in a heavy wooden mortar with fermented parkia seeds (soumbala). The dish's pungent depth comes from the chemical transformation of parkia beans during traditional multi-day alkaline fermentation, releasing high concentrations of savory umami-rich glutamates.
