The word 'Lanmoumou' literally signifies 'fresh, unfrozen meat or fish' in the local language, distinguishing it from dried or smoked offerings. Coastal cooks rely on a small knob of fermented fish (momoni) melted into hot palm oil to unlock deep oceanic umami, creating a rich base that clings perfectly to white cornmeal dough.
