Leqebekoane (Basotho Steamed Maize Bread)
A traditional Basotho steamed sweet maize loaf gently cooked over fresh green leaves and river stones for an earthy, moist crumb.
The story
Leqebekoane is an emblematic indigenous bread of the Basotho nation, traditionally prepared to nourish herders and travelers journeying through the mountain passes of the Mountain Kingdom. Rather than baking in an oven, the dough is historically wrapped in fresh green corn leaves and suspended over clean river stones with a shallow bed of boiling water. This technical method of indirect steam trapping allows the dense whole-grain maize to cook evenly without scorching the delicate outer crust, resulting in a soft, pudding-like grain structure.
