Libyan Bazeen (Steamed Barley Dough with Spiced Lamb, Potatoes, and Eggs)
An ancient sculpted dome of dense barley dough surrounded by rich tomato lamb gravy, tender potatoes, and eggs.
The story
Bazeen is Libya's premier ancestral dish, carrying centuries of Amazigh and Bedouin heritage. Preparing the dough requires rigorous physical technique: unleavened barley flour is boiled and kneaded forcefully with a specialized flat wooden paddle called a magraf until silky and dense. It is shaped into a majestic central peak and eaten communally by hand from a single wide brass platter.
