The story

Originating among the Tonga, Ila, and Lozi pastoralist peoples of Southern and Western Zambia, Mabisi is a foundational daily staple eaten at sunrise. It is traditionally fermented in hollowed calabashes (inkasi or nsupa) lined with ancestral bacterial cultures from previous batches. Unlike industrial yogurt, authentic Mabisi relies on a multi-species spontaneous fermentation driven predominantly by Lactococcus lactis and Leuconostoc, yielding a velvet curd without excessive tartness.
