Malafó de Cibe (Fresh Palmyra Palm Wine)
An effervescent, naturally sweet wild palmyra palm sap lightly infused with fresh ginger, grains of selim, and aromatic lime.
The story
Among the Papel and Balanta peoples of coastal Guinea-Bissau, Malafó de Cibe (the fresh sap tapped from the towering Palmyra fan palm, Borassus aethiopum) holds immense spiritual and social weight. Harvested at dawn from the crown of the palm, the sweet, milky sap begins naturally fermenting within hours due to wild yeasts clinging to the tapping gourds. For solemn libations and elder assemblies, master carvers and hosts elevate the pristine nectar by tempering its effervescence with crushed indigenous spices and citrus peel to balance its live, earthy sweetness.
