The story

Across the humid lowland forests of the Littoral, Center, and Southwest regions of Cameroon, Matango (also known as palm wine or 'white stuff') is harvested by master tappers from Elaeis guineensis trees for traditional marriage rites and village councils. Fresh sap emerges from the tree intensely sweet and translucent, but colonizing wild Saccharomyces yeasts and lactic microbes within the collection gourd spark spontaneous fermentation in mere hours. To modulate excessive sweetness and stabilize the delicate brew, elders traditionally steep bittering rainforest barks like Garcinia lucida (Essok), creating a dry, complex, and tonic-like effervescent finish.
