The story
Originating among the Bedouin nomadic tribes of the Sinai Peninsula and the Western Desert, this dish represents the pinnacle of campfire hearth baking. Traditionally prepared to honor visiting desert travelers and during communal seasonal feasts, the stuffed loaf is placed over sand and baked directly beneath a blanket of glowing coals. An authentic Sinai medfouna relies on un-rendered lamb tail fat (leeyah) diced finely, which gradually renders into the raw spiced lamb filling during baking to self-baste the dough from within while remaining crisp outside.
