The story
Mokary (or mokary vary) is the iconic morning street food across the coastal regions of Madagascar, particularly among the Sakalava and Antakarana communities. At sunrise, street-side vendors fry these puffy little cakes in distinct multi-well cast-iron molds called lapoely, serving them smoking hot wrapped in paper alongside spiced black coffee. A foundational technique of authentic mokary is a brief yeast or overnight fermentation, which introduces a mild sourdough-like tang that perfectly balances rich coconut milk and sweet rice.
