The story

Celebrated throughout the Eastern Province of Zambia, Mphangwe is a signature green relish revered by both the Chewa and Ngoni peoples for evening meals. Freshly picked from lush household gardens (minda) along riverbanks, these robust brassica leaves provide a distinctive peppery counterpoint to dense, neutral nshima. A key technique in Chewa kitchens is keeping the cooking time brief with minimal water, which tames the natural mustard glucosinolates without stripping the greens of their signature bright green hue.
