The story

Originating from Central Kenya's ancestral slaughter rituals where every part of the goat was consumed, mutura evolved from a sacred ceremonial food into the country's most celebrated twilight street snack. Roadside butcher-chefs grill long coiled ropes over smoking acacia charcoal brazier grills, serving steaming, bite-sized rounds directly on wooden boards alongside fiery kachumbari. A crucial technical detail is poaching the sausage gently below boiling point before grilling; boiling too violently expands the fresh blood and bursts the fragile natural intestinal casings.
