The story

Originating among the Hausa people of Northern Nigeria, Suya is the undeniable king of Nigerian street food, perfected by master grillers known as Mai Suya. The secret lies in the Yaji spice blend, built around defatted peanut paste (kuli-kuli) and warming aromatic spices like uda and ginger. Skewers are traditionally served on sheets of old newspaper, wrapped with crunchy raw onions and cabbage.
