The story

Sold in brown paper wraps at the Sir Selwyn Selwyn-Clarke Market in Victoria and featured at island village celebrations, Nougat Koko is a beloved Seychellois confection. Introduced during the 18th century as an adaptation of French confectionery techniques using island-grown coconut and sugarcane, it contains no egg whites or nuts despite its name. The culinary secret lies in extracting the natural oils from freshly grated mature coconut meat during prolonged simmering to achieve a chewy, fudge-like consistency.
