The story
Nshima ya Kalundwe is the beloved regional staple of the Tumbuka, Lunda, and Luvale communities of Northern and Northwestern Zambia, serving as the centerpiece for midday and evening meals. Made from fermented and sundried cassava roots milled into a fine white starch, it offers a characteristic subtle tang and more elastic chew than maize nshima. The defining culinary technique is the vigorous paddling action known as ku-soka and ku-mata, which requires formidable forearm strength to eliminate lumps and gelatinize the starches into cohesive mounds.
