The story

Ntobwa is a historic revitalizing brew of the Tumbuka and Chewa people in Eastern Zambia, traditionally carried to agricultural fields in gourds to sustain workers through grueling harvest afternoons. Unlike alcoholic beers, this lactic beverage offers gentle effervescence and instant carbohydrate replenishment without inebriation. Master traditional brewers carefully wait for the cooked sweet potato and maize porridge to cool below 55°C before pitching the malted sorghum flour to prevent thermal destruction of active amylase enzymes essential for sweetening.
