The story
Found on every table from modest roadside grill shacks on La Digue to grand wedding buffets across Seychelles, Piman Kraze is the soul of Creole condiment culture. Originally prepared using a flat granite grinding stone (ros kraz piman) inherited from Malagasy and Indian practices, the paste balances blistering capsicum heat with volcanic acidity. Pouring smoking-hot neutral oil over the raw crushed paste gently blooms the allium aromatics and pasteurizes the blend without dulling the sharp, floral notes of the native chilies.
